Super Moist Carrot Cake Mix by Betty Crockerlouisg's Review (Aug 9, 2023)

I finally got around to making this carrot cake after buying the cake mix at least 6 months ago. Betty Crocker cakes are so good / delicious, and surprisingly vegan. The suggested recipe on the box is not vegan, but the cake mix itself is. 

Needless to say, I veganized the recipe. Instead of using 3 eggs, I used the equivalent of 3 eggs with ground flaxseed and water.(a 1:3 ratio for each egg). and to make the cake a little healthier or a little less unhealthy, I used unsweetened applesauce instead of oil. In addition, I mixed in a bit of pumpkin spice flavoured date spread for extra moistness (this will be reviewed next).

The cake still retained its carrot flavour as it always does. The visible and tiny carrot flavoured bits help. I’m actually surprised that I baked the cake; I often eat the cake mix raw. Why delay the pleasure? 

Like many cake mixes, there’s a lot of sugar and salt in it. Otherwise, I would make this much more often. 

I bought the cake mix at No Frills.  The regular price nowadays is ridiculous; maybe $3 or $4 which I refuse to pay. I’ll only buy the cake mix on sale and when I can’t resist anymore.
