🇫🇷 When in France you have to eat ratatouille as well right?! Hiking 🥾for most of the day no one has the inclination to chop all the veg and cook it ourselves. Who am I kidding? I never have that inclination! #lazyvegan 🤪Therefore I love these pantry staples that are super healthy you can keep in the cupboard to add to pasta or rice. Ratatouille is awesome with courgette, 🍅tomato, 🫑pepper, 🍆aubergine, and 🧅onion. This had big chunks of all these and served four easily with some other things.
