I think a good plate of hor fun comprises well fried smooth kway teow with a smoky aroma (that doesn’t clump together), as well as a savoury gravy that makes you want to slurp everything up. This hor fun has got both. Other ingredients include small cubes of fried beancurd, vegetables, slices of mock meat and fish cake.
