How beautiful is this blue spiruluna ice cream?! Walking down 6th Ave, I spotted Van Leeuwen, so I had to stop! This gorgeous blue and green ice cream resembles our beautiful planet earth, hence the name. The blue ocean is made from spirulina, and the green earth pieces are made from delicious matcha tea cake. I love that they seem to be expanding their #vegan options. The ice cream was super rich and creamy and had a vanilla- almond flavor. Vegan ice cream has come a long way from the early days of that weird icy consistency. It is definitely a bit pricey, but everything is made in-house, and it truly is delicious!
