JUST EGG BENEDICT at Silver Diner — iamjustathena's Review (May 17, 2023)

The description on the menu reads: “Vegan scrambled “eggs,” smoky tempeh “bacon,” baby spinach, grilled tomatoes, vegan cheese sauce, sourdough toast, fresh strawberries and fruit.”

This Just Egg Benedict exceeded my expectations. The fluffy vegan scrambled "eggs" were remarkably similar to the real thing (from what I can remember), and the smoky tempeh "bacon" added a delicious savory touch. The combination of baby spinach, grilled tomatoes, and vegan cheese sauce created a harmonious blend of flavors. Served on perfectly toasted sourdough, this dish was a true vegan breakfast masterpiece!
