Yummm! What a sweet way to start breakfast! The cake was nice and moist and had great carrot cake flavors like cinnamon. However, the best part of any carrot cake is the cream cheese frosting. Hard Times makes an incredible vegan version that is so delicious and light on top of this cupcake.
