I love Field Roast Italian Garlic Fennel Sausage. Tonight I used it in my homemade tomato sauce over pasta. I’ve not had meat in 8 years, and with my New York Italian upbringing sometimes I want to enjoy the types of foods I grew up with, sans the cruelty. It’s well-balanced in its spices, & the texture is that of meat. The only way to know that it’s the vegan variety is that lacks the casing. But getting past that is not a problem, a minor consideration, considering how delicious it is.

For me it’s not missing meat, I just like chewy texture and flavorful spices, like seitan, it lets you savor the flavor longer. If it doesn’t taste like meat, but has chewy texture and packed with flavor, I’m game. One of the reasons I love Boca burgers and SweetEarth seitan, they have that quality and don’t taste like meat.
