Kibun

As an unapologetic #lazyvegan, I’m always looking to save time in the kitchen. These #noodles caught my attention on a recent Costco run: they’re already fully cooked and just need to be rinsed and drained. Each packet is large enough to potentially make two meals.
The noodles are thin and delicate — I could see them being used as a stand-in for rice noodles — but they taste and smell slightly of soy, and most importantly, they lack the chewy body that makes udon or pasta so delightful to eat. Although konjac powder is one of the ingredients, there’s no slimy, konnyaku-like texture, so I’d guess that these might be acceptable for people with textural aversions.
So far, I’ve tried them in broth and with a cashew-miso cream sauce (sorry, it looks a mess!) but missed the al dente bite of freshly boiled noodles both times. I definitely see the value in these if you’re minding your carb intake, but for me, the convenience and health benefits don’t justify the diminished experience. Now to figure out what to make with the other 5 bags . . .
