During my trip to Unity Diner, I ordered the ice cream waffles with plant-based bacon and chicken for dessert as it was something I had always wanted to try. I don’t think the combination of bacon/chicken with the waffles was for me but separately I did really enjoy the components of this dessert. The chicken was soft and crispy with a lovely flavour but I think I would’ve preferred it on a burger or salad. The waffles were warm with crispy edges and a soft centre, the caramel sauce was tasty and plentiful and the ice cream was creamy in taste and texture. I wish there had been more ice cream as there was only one scoop and I felt like that would have helped to balance out the sweetness of the sauce. I also feel that some fruit (i.e. fresh blueberries or blackberries) would have been greatly welcomed to further balance out the dish.
