This consisted of luscious melty house-made 🐮🥛-free quesillo and meaty seasoned 🐥-free pollo seitan in between two large fresh pressed nixtamal maize tortillas, topped with fresh garlic cashew crema.  It was hearty, substantial, and irresistibly delicious.
