Baking shortbread is a family tradition - my Mom was Scottish and every Christmas I grew up with the ritual and the finished product - yum! Unfortunately, traditional shortbread requires a LOT of dairy butter. I haven’t made it in a few years because the vegan butters just weren’t working for me.
