From Jan 22’ trip to Mexico 🇲🇽

This Red Pozole (Hominy Corn Stew) is a traditional Mexican dish and this veganized version is absolutely amazing! It has both white and purple hominy with mushrooms, grilled tofu and topped with lettuce, red onion, avocado and sesame. Squeeze a little lime and add some hot sauce and you won’t know what hit you! One of the best dishes here! This place does not disappoint! Everything I’ve had here has been amazing and I can’t wait to go back to Mexico to visit fam and eat amazing vegan food here!! 😋

Update came back on 10/6 and brought my brother n law to try out and show him that one can thrive on a plant based lifestyle and that the food can be delicious 😋. He really enjoyed the food here. I hope he will slowly transition for the animals, planet & health of the family 🥰🌱😋
