This coconut oil is a simple and convenient pantry staple for baking. It’s unrefined, so it smells strongly of coconut. The solids melt readily in the microwave and are easy to work with. Today’s project was almond biscuits; I love the crisp, short quality the oil imparts in cookies. Since I don’t use coconut oil every day, this 16 fl. oz jar is the perfect size, where I have enough on hand but never worry about it going bad.
