Forse uno degli unici ristoranti a Carcassonne che offre la Cassoulet in opzione vegana. Conteneva fagioli, melanzane, patate dolci, pimiento del padron, pomodori e delle polpette simili a Falafel. Mancava leggermente di sale ma nel complesso mi ha soddisfatto, non è facile trovare opzioni vegane a Carcassonne
