Review of Vegetable Enchiladas at Ed's Cantina & Grill by iszy
It's really cool to see a place in such a small town make cashew cream! These enchiladas were pretty yummy and the portion was just the right size. I really enjoyed both sauces. The quality didn't really seem great however. The dish came out in five minutes or less after ordering which was somewhat concerning and suggested that it wasn't really fresh and a microwave may have been employed. Even with that, this seems like the best place in Estes Park for vegans, so I could see myself coming back if I ever visit Rocky Mountain National Park again.
