So happy to find honey mangoes (Ataulfo) at Costco this week! They are one of my favorite summer treats. Very sweet, silky smooth texture, delicious plain, with ice cream, in smoothies, in salads, salsas, stir-fries, desserts, sauces…. no end to the possibilities. I love to make a thick mango & banana smoothie and top it with granola, nuts, berries or any combo… an excellent way to start a summer day!
