Gluten Free Pancake Mix by Bob's Red MillSarah's Review (Jun 9, 2022)

First homemade GF pancake experience! I followed the directions but used a baking powder egg instead of a real egg (combine 1 tsp baking powder, 1.5 tbsp oil, 1.5 tbsp water to replace 1 egg). The batter was thick and the pancakes turned out thin but soft. If you overcook them they get crispy. They weren’t dry and the texture was good but ever so slightly gritty, and you can kind of taste the rice flour. A decent amount of effort went into the mix so you might as well make pancakes from scratch, which I’m going to try next time using a different kind of flour!
