Part 3 in my lunch saga…I heated the Westbrae Chili Beans in some water and added salt, pepper and Pampered Chef Southwestern Seasoning to make them taste like chili. I mashed some of the beans to make them have a kind of thick sauce, then poured them over the Fritos.

Ideally, if I had been shopping and had some on hand, these would be topped with vegan cheese, and for those who want to get fancy you can add a scoop of vegan sour cream and sliced green onions.

But for today I just had this poor girl’s version of Frito Boats but it was still satisfying and hit the spot.
