While traveling between Florida and New York via an Amtrak train, I was happily surprised to find this vegan enchilada included as part of the meal service as I was staying in a private compartment. The taste was surprisingly good and it came with a side salad which was much appreciated. I didn't have to use the dining cart once throughout an entire 24 hour journey!
