Review of GF Lemon Blueberry Cheesecake at Wisdom Vegan Bakery by d0ubledog5
They said the cheesecake part of this is make with cashews and chickpea (flour?) which I wouldn't have guessed. The top (glassy looking) layer seems to be a lemon/sugar icing. The main part isn't as rich/gooey/thick in texture nor as sugary as the other GF cheesecake we have tried (red fruit of some kind and chocolate) but the blueberries and lemon icing balance it out really nicely. I don't feel sick or gross from too much sugar with this like I do with many cheesecakes. The serving was so big that 2 people can easily share it.
I love how the top layer gives a kinda stained glass type appearance. Very cool!
