buffalo cauliflower, coconut bacon, grape tomatoes, chili lime chickpeas, almond cashew parmesan, shredded kale, vegan caesar dressing

This is my go to salad in the Durham, NC area. The dressing is slightly spicy and tangy and delicious! I crave the cauliflower between each visit. They have a few other vegan options, as well as make your own bowls. #durham

They used to have a Happy and Hale in downtown Greenville, (they recently closed) and I loved this salad from them! The only thing I thought it needed were some cucumbers or celery to cut all the salt. But it was so yummy, I’m sad I can’t get it anymore! 

I was just in Greenville on Saturday and loved walking through River Park North! Cucumbers or celery would be a nice addition, for sure!

Oops I meant Greenville, SC haha! Glad you enjoyed your time there though!
