Tomato Ceviche at Nobu Washington D.C.Sara's Review (Mar 5, 2022)

Largely diced tomato with thinly sliced red onion, a small amount of quinoa and topped with cilantro in a tangy marinade.

The dish was good, but I don't think it truly resembled ceviche as I'd expect it to be diced smaller. The flavor combination was impeccable though.
