I’m not a fan of eggplant but I’m coming around! This was good.
Looks like fish fillets to me!

Definitely delicious, it was cooked with zhoug, and date syrup.
Had a crispy skin and soft on the inside
It’s worth trying as long as you like the softness of eggplant!
