Pat had this dish at our Christmas meal but I've had it in the past: Bonobo's carrot salmon with pesto and soft cheese wrapped in pastry. Served with all the trimmings: maple roasted carrots and parsnips, garlic and thyme roasted potatoes, mustard celeriac mash and sage and onion stuffing with a herby dill and parsley sauce.
