Stir Fried Eggplant

Chengdu

First time eating at Chengdu and it did not disappoint. Everything was really good. This dish in particular was amazing. Eggplant can be too slimy for me, but this was not at all. The eggplant was cooked just enough and the sauce was really flavorful.
