Chilled Soba Noodle Salad

Modern Times Beer

This consisted of firm and chewy soba noodles, chimichurri, fresh and crisp shaved beet, spinach, pickled onions, scallions, mint, and toasted cashews.  Full of vibrant flavors, it was delightful and refreshing.
