This consisted of delicious seasoned, fried, fluffy, and chewy flat bread topped with super greens slaw, cilantro, and tofu that was marinated in coconut milk and rum, breaded with panko breadcrumbs and shredded coconut, and then deep fried. The tofu was crispy outside, tender inside, and tasty. The creamy sauce was flavorful, with a mild amount of 🔥. Served with savory plantain chips and easily veganized by leaving off the cotija cheese.
