Review of Vegetarian Tofu Seaweed Soba at Shimbashi Soba (Paragon) by iloveveggies

was delighted to find a vegetarian menu in a Japanese restaurant! sadly the tempura batter contains egg so it isn't vegan friendly and the staff was really friendly and helpful in pointing out that the nugget that this soba originally has contains egg as well so I swapped it out for more vegetables! the broth was quite light and there was quite a good amount of tofu and veggies in here so I didn't feel like I was missing out much even with a vegan option! sometimes vegan options come with a sad few pieces of veggies but this definitely was a hearty bowl of noodles 😌 come early because the queue builds up fast!
