SO GOOD! This is a really special dish. Don’t be fooled by its simple appearance!

It’s a hearty vegan stew of locally grown Red Tepary Beans, 60 Day Corn & White Sonora Wheat Berries.

Served with fresh tortillas and packaged in a compostable container!

This is a wonderful healthy and delicious dish.

Each October I find myself excitedly awaiting the return of San Xavier Cooperative Farm’s food booth at an amazing local cultural festival.

They offer indigenous foods from The Tohono O’odham Nation.

Tucson Meet Yourself (dubbed by the locals ‘Tucson EAT Yourself’) is a several day festival where the folks who make up our diverse community share the food, art, dance (and so much more) that are unique to their heritage.

This year I masked up & braved my way through the throngs of festival goers-making a beeline to San Xavier’s huge bubbling pots of deliciousness! It’s amazing just how good food can taste when it is grown, harvested and prepared just a few miles away!

🌾💛🌽

San Xavier Co-Op upholds the agricultural traditions & practices of The Tohono O’odham, who have been farming the region for over 4,000 years.
