This was such a great quick breakfast. It's honestly something I crave a lot as a vegan, a good quick and dirty breakfast sandwich, and this hit the spot. It was a bit messy with melted cheese just perfectly, and the tomato slice on there was delicious. The hashed potato was crispy and perfect. #veganisnotscary
