
This is a great salad for when you need something quick and nutritious. It's filling with the vegan-mayo dressing, edamame and almond's.
It's a nice combo of sweet cranberries, juicy tomatoes, soft edamame and crunchy kale.
The one critique I have is that the dressing is almost half the calories of the dish. I wish there was a way to make the dressing more wholesome and with less oil.
