#veganuary This is an Ottolenghi recipe from Plenty More. Courgette Baba Ganoush. I used Fortune’s silken tofu instead of yoghurt which worked like a bomb. Just blended it with a stick blender. I imagine this could replace a lot of dairy things. #veganuary
