Eggplant Curry at Top Burmese — pdxveg's Review (Dec 28, 2020)

This consisted of long Asian eggplant stir cooked with fresh garlic, ginger, and onion, and spiced with turmeric and paprika. Served with steamed jasmine rice. It was hearty and satisfying, with rich flavors.
