Very pleasing on the eye and equally so on the palate! 🍅🌶The roasted tomatoes, peppers, red hummus and chilli oil carry the dish with the vegan ricotta adding little to the dish. This is a light breakfast. If hungry I would suggest going for the tofu scramble, vegan Shakshuka or vegan smashed avo. #veganisnotscary 4️⃣
