Brinjal with Beancurd at 甘味林素食餐厅 Cameleon Beancurd Vegetarian Restaurant — Steven Neoh's Review (Sep 12, 2020)

Swimming in oil, as spicy as it looks, with bits of beancurd fried to a crisp standing in for where the lard cracklings and/or salted fish would be in the omni version of this dish. Fabulous. (Serving is considerably larger than what you see, I ordered this on Grab and re-plated at home)
