Chick'n N Waffles – Back when it felt like I was the only vegan in all of rural PA, I was mystified when I saw churches advertising chicken and waffles fundraising dinners. It seemed like an insane concept. Now that I can enjoy crave-worthy vegan versions such as this one, I understand the appeal. The savory plant-based chicken, which was crispy on the outside and tender on the inside, went wonderfully with maple syrup-drenched waffles. How wonderful that no chickens had to suffer and die to provide such decadent deliciousness!
