This consisted of seasoned jackfruit, peppers, mushrooms, onions, spinach, and quinoa in a gluten free tortilla with jalapeno cashew cheese sauce, wrapped in a gluten free and vegan tortilla. The jackfruit was a delicious and compassionate stand-in for conventional carnitas, the Mexican version of pulled pork. Together with the other fresh and nourishing components, this made for a very satisfying wrap.
