Borlotti beans are high in protein, potassium and fibre. They are extremely high in folate. They also contain vitamin B6, calcium, copper, iron and magnesium. They have a nutty flavour and a creamy texture. Borlotti bean soup is fantastic for vegans as it is so nutritious. To prepare, place 1 cup of dried Borlotti beans and half a cup of brown rice in a saucepan, add water (right up to the top of the saucepan), heat to boiling point, then simmer for 25 minutes. Garnish with parsley. Enjoy!
