It is undeniable: in the Netherlands the vegan culture is far more deeply rooted in the territory than in Italy. During my erasmus experience it was so easy to eat out and I had so many options rather than just one or two. Located in front of the Maastricht University, the small but delightful “Vers” is the perfect example: the menu is almost entirely plant based, with #vegan, #vegetarian and #glutenfree options both for #breakfast and #lunch! This was a #couscous salad with sweet potato, beetroot, vegan cheese, celery, parsely & hazelnuts, totally in #love.
