The chef was kind enough to vegan “ise” the mushroom risotto for me which meant removing the mozzarella. What this meant was all I could taste was the wine/vinegar used. A replacement such as cashew cream, vegan cheese and or nutritional yeast would have helped a lot. #greyton

A pity but good to know. Veganising doesn't always work unless a chef is familiar with vegan alternatives/replacements.
