It’s hard to find vegan pho and I’m happy to have an option in St. Paul. The temperature was very hot which is wonderful considering it cools down when you add the lime juice and bean sprouts. I did notice it gets to be quite salty when you eat leftovers which was a bummer. TheIr noodles get mushy and starchy as time passes whIch is not ideal.
