This was pretty good! Wasn’t blown away but did enjoy! Imagine sushi where the rice is replaced by mashed potatoes mixed with a bit of non spicy pepper paste, and stuffed with peas, carrots, and mushrooms, and topped with a creamy cashew sauce and avocado! An interesting vegan twist on a peruvian classic- great for an appetizer!
