E.L.T at Pingala Café — Nirali Desai's Review (Jun 6, 2018)

The E.L.T uses baked eggplant as a bacon substitute! It is so yummy. It adds a crunch and 'meaty' flavor to the sandwich. Also this eggplant bacon is so popular that they sell it by the bags now and I buy it everytime I'm in the store! 10/10 would recommend. They also share how they make it -- but mine never comes out the same -- so I just buy theirs!
