Caprese salad was one of my favorite non-vegan foods before I transitioned. To be able to find an alternative that tastes THIS good is a huge YAY!!

This dish features organic heirloom tomato, rice mozzarella, vinegar reduction, and a finish of bright green unfiltered olive oil. Bellissimo!
