The tofu in this vegan Banh Mi was silky soft and marinated to give a sweet flavor. The fresh, crunchy bread roll was perfectly toasted and big enough to hold a large amount of fresh shredded carrot, sauteed ion and Vietnamese pickles. A perfect lunch or light dinner meal.
