Pure Vida is an amazing and weird take on Mediterranean salads! Various ingredients in this bowl include Quinoa, Kale, Falafel, Broccoli, Beets Miso Hummus, Cranberries, Corn Kernels, Cherry Tomatoes, Spiced Chickpeas, Dukkah & Carrot Sesame Dressing!
Even though you can tell from the pics, there is actually plenty of greens hidden in the bottom! And the leaves ARE SO FRESH (which is very impt for salads)
The falafel, hummus and corn kernels were the spotlight of this dish and it was amazing! Falafel as a tad too dry but easy fix!
A few things I didn’t like was the cranberries ( which were a lil too sweet and unnecessary to my liking) & the carrot sesame dressing tasted more like a carrot vinaigrette!! There was also this sandy taste coming out of nowhere and I did bite into some hard kernels and nearly broke my teeth😭😂
I would definitely try the freedom bowl next time! I was rushing for my mid-terms and wanted to eat something quick and easy and this was the only easy grabfood option so I got it!!
