Subo Boracay is the ONLY Filipino restaurant in Boracay :( You simply must go there! Non-Filipinos please go and try actual Filipino cuisine (you're going to love it). And Filipinos please go because the food is incredible! Now, I went to the Philippines before I was vegan (BV), and I can assure you that the Boracay food at Subo is even better than the traditional versions which are served with meat. Especially Adobo - traditionally made with pork and chicken, Subo made it for us with tofu! It was my favourite meal of the night. I love adobo and it was even better as a vegan version - all taste, not guilt :D And what tastes! Here are some things that we are defo gonna write to (+poke) them about: we wonder whether they are a worker co-op? (for further info on Filippino worker co-operatives, read here: https://business.inquirer.net/31985/the-increasing-role-of-workers-cooperatives) Second question: do they have any organic plant-based meals? We think there would be a market niche for that... like basically anywhere (the legal differentiation of "non-organic" and "organic" produce is basically an euphemism for "poisonous" and "a bit less poisonous"... which is an outrage! All fruit & veg (+any plant-based food) should be organic, everywhere, not just the privilege of wealthy citizens who can afford to buy the more expensive, healthier stuff).
