That in the picture is usually called "Pinsa" or "Pinsa Romana" and it is a specific type of pizza, different from the original Neapolitan one ("Pizza Napoletana").
Pinsa differs from Pizza in many features, not only their story, but also in other aspects, like the shape: Pinsa has a distinctive oval or rectangular shape; or the hydration of the dough: Pinsa has a higher hydration level of the dough, which makes it more digestible; the dough itself is different: pinsa's dough contains less carbohydrates and fats and and it's only made by using cold water.
In Perugia you can have pinsa in several places, but my favorite one is "Pietrino": the dough is super light and soft, almost feels like a cloud ☁️ And the porcini are well seasoned and in a decent amount. I would only have liked a little more tomato sauce, but even like this, it was super tasty and delicious.
