The Tarte Flambée is typical of this area, this was the only restaurant in Colmar offering a vegan version of it, topped with vegetables and a pea cream. I enjoyed this dish although I found it to be very different from the traditional one which is cheese based and topped with different ingredients. I don’t think the aim of this dish is to make the flavor of the original one accessible to vegans, it’s only a solution for an easy and tasty extra vegan option on the menu.
