
This dish is boiled buckwheat that you season with onion, ginger, soy sauce, and salt. The waiter knew what vegan means when I told her and went to the kitchen to ask if another dish could be made vegan. They were out of the soup needed for many of the other vegan dishes, so this is what I got. It was very basic, although the seasonings were helpful. Not my thing but I imagine people who like soba a lot may enjoy it more? But traveling in Japan is hard as a vegan so I was just thankful to have food. The experience is also pretty cool. The building is beautiful and very inspired by traditional japan. A woman in a kimono gives you the food ! They do have more vegan items that may be in stock another day. The menu has vegan items very clearly marked.
